I love to make this for my baby and for adults too. So wholesome. What I especially like is that it’s so freezer-friendly. I cook it and freeze it in silicon trays and then tip them into zip lock bags in the freezer. Those mini fish Pie cubes can then be defrosted and reheated in the microwave in just a few minutes.

For the base:
630 ml full fat milk
½ onion, finely chopped
1 bay leaf
700g skinless fish mix (e.g. white fish, salmon) Note: I buy a chowder or fish mix in the fish mongers which is still very high quality but cheaper because the pieces are off-cuts)
100g unsalted butter
50g plain flour
25g frozen sweetcorn (blended to small pieces)
25g frozen peas (blended to small pieces)
For the topping:
900g potatoes
25g grated cheddar cheese
Method:
- Preheat the oven to 200°C.
- Boil and mash the potatoes
- In a large saucepan bring the milk, onion and bay leaf to the boil, before reducing to a simmer. Add the fish and gently cook for 4-5 minutes. Remove the fish from the pan and set aside. Discard the bay leaf and peppercorns.
- Make a roux: melt the butter in another saucepan over a medium heat. Stir in the flour to form a thick paste.
- Stir the milk and onion mixture into the saucepan. Simmer until thickened.
- Flake the fish into the sauce. Make sure to remove any bones. Add in the sweetcorn and peas.
- Spoon the fish mixture into mini ramekin dishes. Top with mashed potato then cheese. Bake for 15-20 minutes.
- For a baby not yet able for texture, blend the fish mixture and serve with mashed potato.
