Healthy, home-made snacks for babies on the go can be a bit of a challenge sometimes. This recipe was originally published in My Kids Lick the Bowl and credit to Stacy! I have made many a batch as they are so handy both fresh and from the freezer. What’s especially great is that there is no added sugar or salt and they are a top choice for Baby Led Weaning (BLW).

ToggleApple, Banana, Carrot Muffins Ingredients
- 150g apple peeled cored and chopped into chunks
- 100g grated carrot (1 medium sized carrot)
- 100g banana (1 small-medium banana)
- 2 eggs
- 1 teaspoon vanilla essence
- 50 g melted butter or oil optional
- 160 g plain flour 1 ¼ cup
- 1.5 teaspoon baking powder
Instructions

Place chopped apple and grated carrot into a steaming basket over a pot with a little water in it until the apple is soft

While that’s cooking, place banana in a large bowl and mash with a fork. Add eggs, vanilla, and butter/oil

Puree the cooked apple and carrot (I use a stick blender) and add apple and carrot to the other wet ingredients

Beat these wet ingredients together with a hand-held beater, should become smooth, yellow and a little frothy

Add the flour and baking powder

Beat for a further 30-60 seconds to make a well-mixed batter

Portion into a greased muffin tin (I use a non-stick silicon tray sprayed with oil). This quantity makes 12 standard sized muffins or 24 mini muffins

Bake at 180 degrees Celsius for 15 mins (350 Fahrenheit). A 15-minute cooking time is based on making mini muffins. If you are using a standard muffin tray and making 12 muffins you will want to leave them in for 25-30 minutes

Cool and serve

These muffins can be stored in an airtight container for 3 days, or they can be frozen in ziplock bags
