Broccoli & Cauliflower Croquettes for Babies

A great on-the-go snack for babies. Delicious for adults too with a dash of sriracha or other hot sauce. They freeze well. Once defrosted I put in the air-fryer for a few minutes and they are just as good as when they are fresh out of the oven. They’re so nice, I always make twice the quantity below.

Ingredients

  • A medium-sized head of broccoli
  • A medium-sized head of cauliflower
  • 2 free-range eggs
  • 1.5 teaspoons garlic granules
  • 1 teaspoon dried oregano
  • 80g grated cheddar cheese
  • 50g bread crumbs
  • A little spray of oil

Method

  1. Cut the broccoli and cauliflower into florets and rinse. Place in a steaming basket in a pot with a little water for 2-3 minutes.
  2. Line a baking tray with parchment/baking paper.
  3. Place the cooked cauliflower and broccoli on a large chopping board and chop very roughly with a knife. Place in a large, mixing bowl.
  4. Add the 2 eggs (beaten), the garlic powder, the bread crumbs, the oregano and mix well.
  5. With clean hands, shape handfuls of the mixture into croquettes and place side-by-side on the baking paper. Spray the croquettes with a little oil.
  6. Place in the oven for 15-20 minutes. They can be lifted gently with a fish-slice and placed in a zip-lock bag in the freezer once cooled.
